Looking for a cheap, easy, and delicious dinner??? well you should definitely try this baby out, it takes a limited amount of ingredients and takes no time at all to prepare.
Everybody in our household loves this meal, it's definitely a family favorite, now bear in mind I have an extremely picky child who refuses to try anything new, however, he loves this.
Prep time: 5 minutes
Total time: 35 minutes
Temperature: 200 degrees fan/electric oven
You will need:
- Chicken breast (you can either cut it up into cubes, strips or just have two whole chicken breasts it really doesn't matter.)
- Chorizo
- Peppers (I used a red and green pepper)
- A tin of chopped tomatoes
- Cheddar cheese
- Uncle bens Mexican style rice (or you can use basmati rice, whatever you prefer)
- Garlic granules use however much you like as long as you cover the majority of the chicken
- 1 teaspoon of salt and pepper
- Smoked paprika again use as much as you like just try to cover most of chicken
- Baking dish (I lined mine with foil, you don't have to but it saves a bit of washing up :)
You can add anything you like to this dish, these are just what I normally use.
To begin we're going to prepare everything so start by preheating the oven to 200 degrees
Chop up the two peppers, scrape out the insides and chop into small pieces
Chop the chorizo
Prepare the chicken breast either chop them up or keep them whole (I just buy chicken breast fillets so it's already done for me.)
Place your chicken in the dish (no need to brown first) sprinkle the chicken with garlic granules, paprika, salt, and pepper.
It's time to add the chorizo, simply lay it on top or in between the chicken, there's no right or wrong way for this.
Add the peppers.....
Once you've added the chorizo and peppers we can now add the chopped tomatoes, so pour them on top and just move the tomatoes around so most of the chicken is covered (see picture below)
All that's left to do now is add the cheese, use however much you like. Were cheese addicts in this house so I smother it in the stuff lol, plus let's face it melted, crispy cheese is just the best thing ever
Now place in the oven and let it cook for around 30 minutes (just make sure your chicken is fully cooked through) and when its ready it should look like this.
While that's cooling down we can now prepare our rice, so cook that according to the packet instructions in my case that was just 2 minutes in the microwave.
Place the rice on the plate, make a little hole in the middle and add your chicken and chorizo bake on top and that's it!!!!!
